What’s for Supper?

It’s been a hectic, busy and fun-filled week for us, like it probably was for you!

It started off last Tuesday with our church feeding a Thanksgiving meal to some needy families in our community. On Thursday, we celebrated Thanksgiving with my husbands family and on Friday, my family came to our house to celebrate Thanksgiving.  It seems like I lived in the kitchen for four days! :)

On Thursday night, my mom and dad kept the boys while Robert and I slipped away to the Black Friday sale at Walmart.  Thankfully, we were able to leave within 20 minutes of the sale starting with the items we went for, so we didn’t have to brave the crowds too long.

While our company was here on Friday, Robert had the smoker going and smoked a turkey I had bought for 49¢ lb. It is now in the freezer, in meal-size portions, to enjoy in the coming months.

On Sunday night, a friend who we haven’t seen in a while came to our church to let us meet her fiancé, and after church we went to Braum’s and stayed out way too late laughing and visiting.

Yesterday was filled with Cyber Monday deals, washing clothes, and general housework.  So, last nights’ meal consisted mainly of leftovers.

Once the boys are done with their schoolwork for today, Ryan goes to the dentist to get the space maintainer put in. Fun, fun!

Here’s what I have on my menu for today (per my man’s request!):

Smoked Turkey
Mixed Vegetables
Homemade Biscuits

What’s for Supper?

It’s only one week until Thanksgiving!! So many things to do, and so little time!  But, I am ready to see family and spend the days having fun!

On Tuesday night I made a black-eyed pea relish that looked and sounded fantastic, but we all agreed that it was far too bland, so we didn’t eat much of it.  So, tonight I am remaking it into a different dish that is sure to add a lot more flavor.  The relish included yellow, red and green bell peppers, red onion, garlic, serrano pepper and roma tomatoes, but it still needed something, hopefully cooking it in the crockpot will make the flavors be more pronounced.

Life is back to normal – for a few days anyway – around here.  I love having my man home on a normal workday, but it sure messes up my schedule (that is definitely not a complaint, just an explanation!).

Here’s what I am cooking today:

Chicken & Cheese Stuffed Poblano Peppers
Pinto Beans

TGIF!  Today is set to be one busy day: homeschooling (almost done!), my husband is off today since he is meeting with a man about a new business venture (we’re waiting for him to arrive as I type), then it’s off to do my weekly grocery shopping, and after that we have to do the final preparations for tomorrow’s 4H buckle show.

Here are the boys practicing with their does the day we clipped them.

This is my menu plans for tonight:

Baked Potatoes loaded with butter, sour cream, bacon bits, and chives
Sliced Red Bell Peppers
Carrot Sticks

My menu plans for last night flew out the window since soon after I posted my plans I received word that many were meeting at the church to pray for our Country and the outcome of today’s voting. So I met my husband at KFC to enjoy their Monday night $1.99 special and will do last night meal plans probably on Thursday!

Slow Cooker Parmesan Honey Pork Roast
Mashed Potatoes
Mixed Vegetables

Beef Taco Salad (ground beef, lettuce, tomatoes, onions, shredded carrots, beans, sour cream, jalapeño slices, fritos, hot sauce and bbq sauce)
