What’s for Supper? Crockpot Lasagna

Happy Monday!  This is what my menu looks like for tonight …

Crockpot Lasagna
Spinach Salad
Bread Machine Italian Breadsticks

Crockpot Lasagna
serves 6-8
• 8 whole grain lasagna noodles – uncooked
• 1 lb ground beef (or italian sausage)
• 1 tsp. italian seasoning
• 28-oz spaghetti sauce
• ¼ – ½ c. water
• 15 oz cottage cheese (or ricotta)
• 2 c. shredded mozzerella cheese
1. Break noodles. Place half in bottom of greased 6-qt slow cooker (or use a slow cooker liner!)
2. Brown ground beef in saucepan. Drain. Stir in italian seasoning. Spread half over noodles in slow cooker.
3. Layer half of sauce and water, half cottage cheese, and half mozzerella cheese over beef. Repeat layers.
4. Cover and cook on low for 5 hours.
