What’s for Supper?

This is what my menu for tonight looks like on this cold and windy day …

Pepperoni Pizza Soup
Green Beans
Bread Machine Italian Breadsticks

Pepperoni Pizza Soup
serves 4-6
 
• 14 oz pizza sauce
• 1 green bell pepper – chopped
• ½ red onion – chopped
• 5 oz sliced mushrooms
• 15 oz diced tomatoes
• ½ tsp. basil
• 1 Tbsp. oregano
• 1/3 c mini pasta
• 3 italian sausage links – cooked and sliced
• 25-30 pepperoni slices – halved
• 1 Tbsp. olive oil
• water
 
1. In large saucepan heat oil and sauté onion.  Add all remaining ingredients except for pasta.  Bring to boil.  Reduce heat and simmer for 20-30 minutes.
2. Add pasta, bring to boil.  Cook for 7 minutes or until pasta is tender.
3. Serve each bowl topped with mozzarella cheese.
