What’s for Supper?

Being raised a country girl where if it wasn’t beef, beans and taters, we likely didn’t eat it! Our idea of seafood was fried catfish. 😀 Since being married, I have stepped out of my comfort zone numerous times and tried new seafood items, although we still do not eat fish that often. I’m sure it would do us good to change our ways … but old habits are mighty hard to break! Tonight we are having something that the family does enjoy …

Salmon Patties
Macaroni & Cheese
Blackeyed Peas

Salmon Patties

  • 15oz Pink Salmon
  • 1 egg
  • ¼ – ½ c minced onion
  • ½ c flour
  • 1 ½ tsp baking powder
  • Vegetable Oil or Olive Oil

Drain salmon; reserving 2 Tbsp juice.  In mixing bowl, combine salmon, egg, and onion until sticky.  Stir in flour.  Add baking powder to juice; stir into salmon mixture.  Form into small patties and fry in small amount of oil for 5 minutes or until golden brown.
