What’s for Supper?

If preparing supper at your house is anything like it is around here some days, you know there are times when literally nothing sounds good.  Then you ask your husband what sounds good to him and he gives you the “I don’t know” answer.  Now, that was a lot of help wasn’t it? 🙂 One reason I do this “What’s for Supper” feature, is in hopes that it will give you some ideas for meals for your family.  I know there are plenty of days where I need inspiration and ideas! 🙂 Here is tonight’s menu …

Chicken with Creamy Dijon Herb Sauce *new recipe
Squash Au Gratin

Squash Au Gratin
6-8 servings

 • 2 lbs yellow squash
• ½ tsp. sugar
• 1 tsp. salt
• 6 Tbsp. butter (or, to taste)
• 1½ c. shredded cheddar cheese
• 1 c buttery crackers – crushed (Club)
• 5 oz evaporated milk
• 2 eggs, beaten
• pepper (to taste)

1. Boil squash with salt and sugar until tender.  Drain well.
2. Add butter, 1 c shredded cheese, ¾ c crushed crackers, milk, eggs and pepper.  Mix well.
3. Pour into a 2 qt. baking dish.  Sprinkle with remaining crushed crackers and cheese.
4. Bake 30-45 minutes at 325°.

We are having fried fish (caught by my guys). Not sure what I’ll put with it yet.
